Asparagus and eggs make a perfect combination – and this recipe is quick and easy to prepare. Great for a packed lunch or double it up for a family dinner; either way this a delicious seasonal light dish.


  • 1 large Bird Brothers egg, hardboiled, peeled and then sliced
  • Chopped asparagus
  • 2 rashers of bacon
  • 1/2 tsp Dijon mustard
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon red wine vinegar
  • A pinch of salt and pepper, to taste


  1. Bring a pot of water to a boil, add the asparagus and cook 2 to 3 minutes, until tender yet firm. Drain and run under cold water to stop it from cooking further. Set aside.

  2. Cut the rashers of bacon into strip and cook until crispy. Once cooled cut and crumble to bite size pieces.

  3. In a small bowl mix the Dijon mustard, oil, vinegar and a pinch of salt and pepper.

  4. Arrange the asparagus on a plate, top with egg and bacon and drizzle with the vinaigrette. Enjoy!
