Tuck in to Pancake Day and leave the guilt behind!

Try this light and fluffy Banana Protein Pancake recipe to get your sinless fix. Simple and wholesome, these ingredients not only taste amazing but will also give your body the healthy hug it deserves. Egg whites, protein powder and ripe bananas make up these low-fat and low-carb pancakes, for a complete meal under 200 calories. Need we say more?!

  • 2 (20g each) scoops vanilla protein powder
  • 1 large very ripe banana, mashed
  • ⅛ tsp. cinnamon
  • ¼ tsp. baking powder
  • ¼ tsp. salt
  • 2 Bird Bros eggs

  1. Start by separating the eggs whites from the yolks and placing them into separate bowls, one for the whites and one for the yolks.

  2. Beat the egg whites on high for 2 minutes until they form soft peaks. It’s important that your bowl or beaters don't have any oil, fat or yolks on them, or the egg whites won't form peaks. Soft peaks are defined as “barely holding their shape”, they should flop over immediately when the beaters are lifted.

  3. Add the banana, cinnamon, baking powder and salt to the egg yolks and beat until smooth. Gently fold in a third of the egg white mixture into the banana mixture until roughly combined. Then gradually and gently fold in the rest of the egg whites until everything is well combined. The trick here is to not mix the egg whites in too hard as this brakes the air bubbles, resulting in flatter pancakes! We want to keep the “oomph” in there as much as possible.

  4. Heat a frying pan over low heat and add a drop of oil (feel free to use your preferred oil or butter, we used coconut oil). Scoop a small ladle-full of the mixture onto the hot pan and cook for 60-90 seconds on each side.

  5. Serve up immediately! Optional: top with fresh fruit and/or plain non-fat Greek yogurt with honey.
