Fork New Potato, Smoked Mackerel And Egg Salad

Summer lunch doesn’t get better than this…


  • 2 Bird Bros eggs
  • 250g new potatoes
  • 2 fillets smoked mackerel, skinned and flaked
  • 2 little gem lettuces, washed and roughly torn
  • a handful of chopped parsley leaves
  • For the dressing:
  • 1 tbsp Dijon mustard or horseradish sauce
  • 1 tbsp white wine vinegar
  • 3 tbsp olive oil
  • a pinch of sugar
  • salt and pepper


  1. Make the salad dressing first. Shake all the ingredients together in a jar and set aside.

  2. Boil the new potatoes for approximately 15 minutes (or until soft). Allow them to cool then cut in half.

  3. Boil the eggs for 5 minutes then transfer to a bowl of iced water. Leave until cool, then peel.

  4. Place the lettuce, potatoes and smoked mackerel onto two plates. Carefully sit an egg among the leaves. When ready to eat, quarter the eggs, dress the salad and scatter with parsley leaves.
