  • 8 hard boiled Bird Brothers eggs, peeled and coarsely chopped
  • 3 tablespoons minced red onion
  • Salt
  • Freshly ground black pepper
  • ½ cup mayonnaise
  • 2 tablespoons chopped fresh tarragon
  • 2 tablespoons minced fresh chives


  1. Put the red onion in a small bowl and sprinkle liberally with salt, then cover with water for 5 to 10 minutes.

  2. Place the eggs in a medium sized bowl and season with salt and black pepper. Add mayonnaise. Strain onion and add it, along with herbs, and stir with rubber spatula until all the ingredients are uniformly combined.
