A speedy meal best eaten al fresco (if the sun is shining!)

Ingredients:

  • 1/2 cup shredded lettuce
  • 2 tomatoes, chopped
  • 1/2 cucumber, chopped
  • 2 tbs coriander, chopped
  • a pinch of chili powder
  • 2 soft tortillas or wraps
  • 2 Bird Bros eggs
  • 2 tbs low fat yoghurt

Method:

  1. In a bowl combine lettuce, tomato, coriander and cucumber with a pinch of chili powder.

  2. In another bowl, beat eggs with some salt, pepper and a pinch of chili powder.

  3. Put one wrap in a non stick frying pan over moderate heat until toasted on the underside.

  4. Turn wrap over and pour half of egg mixture over the surface, spreading to the edges. When egg has set around edges, quickly flip over, cook for a few seconds longer.

  5. Transfer to a serving plate with egg side up. Repeat with remaining wrap and egg.

  6. Spoon the salad mixture down the center of the wrap; drizzle each with 1 tbs yoghurt. Roll up and serve.
