If you’re looking for a scrummy, low calorie and nutritious vegetarian meal, this courgette frittata is quick and easy to prepare.

Ingredients:

  • 30ml/2tbsp vegetable oil
  • 1 onion, sliced
  • 2 courgettes, finely sliced
  • 6 Bird Brothers eggs
  • 75g/3oz Cheddar cheese, grated

Method:

  1. Heat the oil in a frying pan, add the onions and fry for two minutes until soft. Add courgettes and fry for four minutes until golden.

  2. Beat the eggs and add salt and freshly ground black pepper. Pour the eggs into the pan and cook, stirring until the egg has lightly set. Shake the pan to level the surface and cook for one minute.

  3. Sprinkle over cheese and cook under a hot grill for two minutes until golden brown and bubbling.

  4. Serve warm in wedges garnished with basil leaves.
