These wonderful Christmas tree meringues will definitely get you in the festive spirit. They’re perfect for a Christmas treat or edible gift.


  • 4 Bird Bros egg whites, room temperature
  • 250g caster sugar
  • Pinch of cream of tartar
  • 1/8 teaspoon of peppermint extract
  • Green gel food colouring
  • Decorations - e.g. stars for tree top
  • Icing sugar to stick on decorations


  1. Preheat oven to 100C and line a baking sheet with parchment paper.

  2. Place egg whites, sugar and cream of tarter in the bowl of a stand mixer set over (not directly on) a saucepan of simmering water. Alternatively, use a bowl and a hand whisk. Constantly whisk until sugar has fully dissolved.

  3. Remove from heat and whisk in peppermint extract.

  4. Using the whisk attachment or hand whisk, beat the egg whites until they are a bright white, but still runny. Add in food colouring and continue to beat until stiff peaks have formed.

  5. Place meringue mixture in a piping bag fit with a large, open star tip. Pipe 1 inch cones at least one inch apart. Bake for 2 hours. After 2 hours, open the door slightly and let the meringues cool in the oven.

  6. Once cooled, remove from oven. Mix some icing sugar and a few drops of water into a thick paste to attach a decoration to the top of each tree. Sprinkle the trees with a dusting of icing sugar for an extra festive touch! Store in an airtight container.
