These take a little more effort than your average scrambled egg, but the results may be worth it! Here’s how to make them.


  • 4 Bird Bros eggs
  • Pinch of salt and ground pepper
  • 50g cooked bacon bits (optional)
  • 50g Parmesan or cheese of your choice (optional)
  • 25g chopped chives (optional)


  1. Preheat oven to 230°C. Separate the egg yolks from the whites as if making meringues. Ensure you use a clean bowl with no shell or yoke in your whites. Take care not to break the yolks.

  2. Add a pinch of salt and pepper and whisk the egg whites until thick, glossy and creamy.

  3. Spoon the whipped white into 4 cloud shapes on a parchment-lined baking tray, making dips with the back of a small spoon in the middle where the yolks will go later.

  4. Bake in the preheated oven for five to eight minutes until there are golden peaks on the top.

  5. Put the egg yolk in the middle of the cloud and return to the oven for three more minutes before serving.

  6. Serve your cloud eggs with anything you fancy - a slice of toast, grilled tomatoes or some avocado.

  7. Optional fillings such as cheese, chives or little cubes of bacon, can be added before cooking the whites, or sprinkled over the cloud eggs before serving.
