This is a simple recipe with a healthy twist. Cooking eggs in coconut oil tastes great. Give it a go!

Ingredients:

  • 1/2 teaspoon coconut oil
  • 2 Bird Bros eggs
  • A sprinkling of chilli flakes (optional)
  • 1 small handful or blueberries, nuts and an avocado to serve (optional)

Method:

  1. Heat up the oil in a non-stick frying pan until melted. When the oil is hot, turn the heat to low and use a knife to crack the shell and tip the egg, straight into the hot fat. Cook over a low to medium heat for 1 minute or until the white is set.

  2. Tilt the pan slightly and use a teaspoon to scoop the hot oil over the top of the egg until the yolk is cooked to your taste.

  3. For over-easy eggs, carefully slide a spatula underneath the cooked egg and flip over to cook the yolk for 1 minute.

  4. Once cooked, lift the egg from the pan using a spatula and place onto kitchen paper to drain away excess fat.

  5. Sprinkle with chilli flakes and serve with a small handful of blueberries, nuts and half an avocado.
