Poached Egg and Avocado toast

Ingredients:

  • 2 slices low-carb bread
  • 1 avocado
  • salt and pepper
  • 1 lime
  • 3 cups packed fresh spinach
  • 1 Tablespoon olive oil
  • 2 Bird Bros eggs

Method:

  1. Mash the avocado with juice from lime and salt and pepper to taste (start with 1/2 lime to see if that’s enough for you). 

  2. Bring water to a boil in a saucepan.  Bring to a simmer and gently drop in the two eggs.  Poach for 6-7 minutes until desired doneness. 

  3. Meanwhile, add the spinach to a skillet with olive oil over medium heat and cook for a few minutes until wilted (season with salt and pepper).

  4. Toast the bread, top with mashed avocado, spinach, and poached eggs. 

  5. Sprinkle with some chili flakes for a little heat (optional).
