Here’s a lovely spicy egg dish that’s perfect for vegetarians – or anyone who loves something hot and tasty. You can vary it by flavouring the simple tomato sauce with whatever you have to hand – curry powder, pesto or fresh herbs.


  • 4 Bird Bros eggs
  • 1 tbsp olive oil
  • 2 red onions, chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 garlic clove, sliced
  • small bunch coriander, stalks and leaves chopped separately
  • 2 400g cans cherry tomatoes
  • 1 tsp caster sugar


  1. Heat the oil in a lidded frying pan, then soften the onions, chilli, garlic and coriander stalks for five minutes until soft.

  2. Stir in the tomatoes and sugar and then allow to bubble for eight to ten minutes.

  3. Using the back of a large spoon, make four dips in the sauce, then crack an egg into each one.

  4. Put a lid on the pan, then cook over a low heat for six to eight minutes, until the eggs are done to your taste.

  5. Sprinkle over the coriander leaves and serve with crusty bread.
